Recipe: Baked Apple Pancake
Baked Apple Pancake
SERVES 6
Ingredients:
2 apples, thinly sliced
1/2 stick of butter
1/2 cup brown sugar
1.5 teaspoons cinnamon
5 eggs
1/2 cup flour
1/2 cup milk
Directions:
Preheat oven to 450 degrees.
Melt butter, brown sugar and cinnamon together in a bowl. Toss the apples into the butter mixture and stir to combine. Place coated apples into a large pie dish.
In a blender, combine eggs, flour and milk. Blend well. Pour mixture over apples in pie dish. Place pie dish on top of a baking sheet (to catch any drips). Bake for 45 minutes or until top is golden brown and a knife inserted in the center comes out clean. Dust with powdered sugar and serve with a drizzle of maple syrup.

such a lovely recipe and sooo forbidden for diabetes sufferers, just too much sugar even if I ration him to one spoonful it would be too much with the butter and the sugar AND the fruit sugars in the apple ~sigh~

Thanks oh so much for this recipe. We have a local breakfast/lunch place that makes this and it’s sooooo good. Now I can make it for us at home w/o having to go out to eat.
Would love to try making your Apple Pancake recipe for my grandchildren but where I come from we can’t buy sticks of butter so I have no way of knowing how much butter by weight to put in the recipe. Can you tell me how much a stick of butter weighs?
Typically, in the US, one pound of butter comes as 4 sticks, making each stick 1/4 pound. So half a stick would be 1/8 pound.
